Matcha Maple Granola with Lycka Frozen Yogurt Vanilla

On these warm summer days we enjoy everything cold and refreshing. Our friends from Lycka Frozen Yogurt had the wonderful idea to create a MATCHA topping for their organic certified products. A blend of nuts, berries and ENERGY MATCHA got the perfect topping for the Lycka Frozen Yogurt Vanilla and is definitely a culinary delight! Try it out and enjoy it!


300g rolled oats
200g nuts, chopped (cashews, walnuts, almonds)
50g coconut sugar (or brown sugar)
2 tbsp coconut oil, liquid
80g maple syrup
2 tsp vanilla extract
big pinch of salt
100g dried berries (cranberries, cherries, blueberries)
2 1/2 tbsp TEATOX matcha powder



Preheat the oven to 150°C/300°F (circulating air) and line a baking tray with baking paper.

Mix oats, nuts and sugar in a big bowl. Combine coconut oil, maple syrup, vanilla extract and salt in a separate bowl and then mix it with the other ingredients in the big bowl.

Spread the granola mixture across the baking tray and bake it for about 30-40 minutes (stirring every 15 minutes) until the granola is golden brown.

Take the granola out of the oven and put it in a big bowl to let it cool for a couple of minutes. Stir in dried berries and matcha powder.
