Christmas Matcha Cookies

Only a few days left till Christmas, but that is definitely still enough time to bake some more Christmas cookies! Ilona showed us on her blog how to bake these delicious Matcha cookies. Matcha gives these a special taste and provides you with healthy natural energy! Wrapped in a beautiful box, they also make a wonderful gift for Christmas.

200 g flour
50 g ground almonds/almond flour
5 g Matcha
50 g Agave syrup
3 tbsp coconut oil
2 tbsp soy milk
some salt
some vanilla essence

Preheat the oven to 175C. Mix flour, almonds, matcha, and salt in a bowl. Slowly, while mixing, add the agave syrup, coconut oil and soy milk. Now it’s time to roll the pastry, but be aware – it shouldn’t be too thin. Take your biscuit cutters and make as many cookies as you can, you may need to roll the pastry again. Now put them on a parchment paper on the griddle and in the oven. Take the cookies out after 10 minutes and let them cool.
