Apple Chai Baked Oatmeal

Apple Chai Baked Oatmeal – this recipe basically screams autumn, right?

Apples are one of my basic ingredients at the moment – I use them daily. Whether it’s in the morning, as a snack or even at night with some quark. But seriously: They are sooo tasty right now, aren’t they? So I will just stick with the old saying „an apple a day keeps the doctor away“.

What I discovered right in time for the colder months is chai tea. Especially before bedtime or while studying – I just can’t stop drinking it. Then I thought: Why not try combining apple and chai in one recipe? I’m certainly not exaggerating when I say this combo is just p-h-e-n-o-m-e-n-a-l!

Ingredients:
Batter:
1 egg
40g coconut flour
50g oats
100g greek yogurt (2% fat)
100ml Harmony Chai tea
2-3 tbsp milk
100g shredded apple
cinnamon
bourbon vanilla

Toppings:
100g apple
1-2 tbsp xylitol or sweetener of choice
cinnamon, vanilla, oatmeal spice (optional)
apple almond granola
2-3 tbsp pomegranate seeds
2-3 tbsp pecans

Preparation:
Heat up the oven to 175C. Mix the egg, yogurt, Harmony Chai tea, flour, oats, spices and milk in a large bowl. Add the shredded apple before spreading the oatmeal batter in two oven dishes covered with coconut oil to avoid the batter sticking to it. Bake it for about 20-25 minutes until golden. I the meantime prepare your toppings: Mix a diced apple with spices and the sweetener. Heat up a pan on medium heat and roast the apple 3-4 minutes. When the oatmeal is ready, just top it with the roasted apples, granola, pomegranate and pecans.
